Exhaust
Ventilator
to be SOUTHERN ENGINEERING SYSTEMS Model SWFM, UL Listed, and in com-
pliance with NFPA Bulletin 96. Ventilator shall be high velocity, low volume, wash type and have a nominal
95% grease extraction efciency certied by an independent testing laboratory.
Canopy
constructed of 18 gauge stainless steel (where exposed) with bottom perimeter edges gutterless. Weld
extraction chamber, plenum, and external seams and joints to form a liquid tight construction. Polish stainless
steel to a #4 nish.
Exhaust plenum
Extraction Chamber
to be single inlet, same material as canopy, full length of section at the
back. Furnish SOUTHERN ENGINEERING water wash manifold consisting of a series of spray nozzles
installed within chamber. Manifold to be positioned within plenum area out of air-stream to minimize nozzle
clogging. Bottom of exhaust plenum to be formed into a pitched trough to allow laminar ow, during wash
cycle, to drain pipe connection.
Water Wash System
to serve the dual purpose of daily cleaning and re control. The wash cycle shall be initi-
ated when the stop/wash button on the control cabinet (required with each hood system) is depressed. Internal
cleaning will be achieved by means of 110 - 160F water mixed automatically with injected detergent. In the
event the re control system is activated, the system shall supply a continuous re quenching spray. Fire
quenching spray shall continue to operate until the reset button is pushed. Pressing the start button will restart
the fan system.
Install hinged, motorized
Fire Damper
full length at air inlet of ventilator. Damper opens when ventilator is in
normal operation, acting as an extracting bafe, and closes when ventilator is turned off to allow thorough
cleansing of extraction chamber interior. Damper automatically closes, sealing interior of ventilator from re
when thermostat senses 325F.
Furnish
Duct Collar
, fully welded, complete with re detection thermostat, in top of canopy within exhaust
plenum area. Duct collar size based on an average 1800 F.P.M. air velocity.
Integral
Make-Up Air
furnished at front of ventilator shall be SOUTHERN ENGINEERING proprietary
Air Curtain design. Outside shell constructed of 18 gauge stainless steel integrated with canopy. Lower front
wall to be constructed of perforated 18 gauge stainless steel. Panels to be designed to distribute make-up air
outward at medium velocity. Front panels shall be hinged at top to allow easy access to interior of make up
chamber. Make-up air chamber tted with an interior diffuser bafe designed to provide even air distribution
across the perforated surface. Top of chamber to be tted with a properly sized rectangular duct collar. Make-
up air duct collar sized to permit 80% supply air.
Furnish UL listed, NSF listed, vapor proof incandescent
Light Fixtures
installed on 3 to 4 centers. Fixtures to
be completely interwired to a junction box and left ready for nal connection to power source. Field connec-
tions and light switch by applicable trades.
Furnish
Rod Hanger Brackets
at front and center to suspend canopy from ceiling. Furnish angle frame mem-
bers at rear for fastening to wall.

EACH CANOPY SELECTED REQUIRES SEPARATE DUCT AND CFM REQUIREMENTS.
To satisfy most codes, allow a minimum of 6 canopy overhang on all exposed sides of cooking equipment.
However, more overhang should be considered for demanding equipment.

WITH AIR CURTAIN MAKE-UP CHAMBER
SOUTHERN ENGINEERING SYSTEMS Model SWDM. A Hi-Velocity, Wall Style, Water Wash Ventilator utiliz-
ing the Air Curtain Make-Up Chamber. This canopy is designed to function over all types of cooking equipment in
single line-up applications.
The SWDM is state-of-the-art in kitchen ventilation. The Southern Engineering Wash design utilizes centrifugal
grease extraction, automatic self-cleaning, and a built-in water barrier for duct and plenum protection in a re mode.
A normally closed damper prevents the loss of conditioned air during off hours, and the latest in microprocessor con-
trols for programming hood functions is an optional enhancement. This ventilator is 95% grease efcient with third
party accreditations.
The Air Curtain design is best suited where it is necessary to temper the air in cold climates. This make-up chamber
supplies tempered (50-55F) or evaporatively cooled air at slightly higher velocities in front of the cooking line-up.
The chef is cooled by slow moving air. This effect aids in the capture of gases and particles by enveloping the lighter
(less dense) heated air and vapors above the cooking surfaces.
